Basic, State or Central: picking the right FSSAI category
Your Kind of Business, turnover and capacity decide the category — and getting it wrong is the most common reason applications get rejected.

Every food business operator in India needs an FSSAI registration or licence. Which one is not a guess, and getting it wrong wastes both the fee and the weeks that follow.
The category is driven by your Kind of Business
FoSCoS classifies food businesses by Kind of Business — manufacturer, retailer, distributor, transporter, food service and so on. That, combined with turnover and production capacity, determines whether you fall under Basic registration, a State licence or a Central licence.
Broadly: small operators such as home kitchens, cloud kitchens and petty retailers usually sit under Basic registration. Restaurants, hotels, mid-sized manufacturers and distributors operating within a state usually need a State licence. Large operators, importers, exporters and businesses operating across multiple states usually need a Central licence.
We check eligibility on FoSCoS before filing anything, because the category decides not just the fee but the entire document set.
The documents step up sharply with category
Basic registration is relatively light — identity proof, business constitution proof, premises possession proof, a utility bill, owner NOC if rented, your product list and a turnover declaration.
State and Central licences add real work: a layout plan of the premises, a water test report, a machinery list, a food safety management plan, technical person details and a recall plan. Form IX nomination applies in many cases. None of that can be assembled the night before.
What happens after filing
The application goes through scrutiny. The authority may raise a clarification or schedule an inspection. Basic registration is usually quicker; State and Central licences may take several days to weeks depending on scrutiny, inspection and how quickly clarifications are answered.
No one can promise you a fixed approval date, and you should treat anyone who does with suspicion.
Renewals
Renew before expiry — you cannot trade on a lapsed licence. Renewals are often instant, but if there is a pending modification, an outstanding penalty or a notice on file, that has to be cleared first. Check your status early rather than on the last day.
